Rubs, also known as ‘dry marinades’, are the true source of the taste of real barbecue food. They are blends of ground spices which are rubbed onto meat, fish, vegetables, etc., prior to cooking to add flavour.
Developed and proven in the heat of BBQ competitions in the United States, where BBQ is considered the national cuisine and almost a religion, rub recipes are very carefully guarded and many enjoy a loyal following.
BBQ Gourmet has carefully selected a range of the very best rubs & sauces from the USA and brought them to the UK market. Many have funny names and eye catching labels , such as:
Bad Byron’s “Butt Rub” – this is a good alrounder which can be used on all meats, vegetables, fish, eggs and much more. Texas “Pit Happens” – this is great for slow smoked brisket and steak. Kansas City’s “Cowtown Sweet Spot” – perfect for lovers of sweet and hot, this is great on chicken wings and ribs.
For smaller cuts of meat which will be cooked at a higher temperature, the general rule is to apply the rub 30 minutes before cooking. For larger cuts of meat which will be slow cooked, it is best to apply the rub the day before and keep in the fridge. Barbeque sauces compliment the rubs and are generally applied towards the end of the cooking process.
